‘Niquel’ is market cuisine with traditional roots, with an eye on the latest gastro trends and a nod to my coastal origins (my parents were born in Bilbao and Santander and I myself in Ibiza) and the city which adopted me: Madrid. The two carnations represent Madrid, as one of its unofficial symbols, and my mother, who is passionate about flowers; the hooks are a reference to my father, a captain in the merchant navy and a great fishing enthusiast, as well as my origins. The menu, created by Jorge Reina, a long-serving executive chef, is a faithful reflection of this combination. The name ‘Niquel’ (a local slang term meaning literally ‘Nickel’ and figuratively similar to ‘tip-top’) is a wink to the city I fell in love with and where I have dropped anchor. It is the first local slang expression I learnt (nickel plated, refined, classy). Níquel is a timeless but open proposal, with a touch of mischief but refined taste. See you at stand 27.
